* 2 lb. meatloaf mix
* 1 tsp. vegetable oil
* 1 medium onion, finely chopped
* 4 garlic cloves, crushed
* 1 jalapeño pepper, seeded and minced (wear rubber gloves when handling hot pepper)
* 4 Tbsp. minced sun dried tomatoes
* 1Tbsp. chili powder
* 1 tsp. ground cumin
* 1 1/2 tsp. salt
* 1 tsp. thyme
* 1/2 tsp. cayenne
* 1/4 c. finely chopped parsley
* 1/2 c. dried bread crumbs
* 1/2 c. skim milk
1. In large nonstick skillet heat oil over medium-high heat. Sauté onion and garlic until soft, about 5 minutes; cool slightly and transfer to large bowl.
2. Add all remaining ingredients and mix thoroughly.
3. Place mixture in a 9 x 4 1/2 x 2 1/2-in. loaf pan and bake in a 350°F oven for 1 1/2 hours.
4. Remove from the oven and allow to rest 10 minutes before removing from pan. Slice to serve warm, or wrap well and refrigerate for sandwiches.
